What's for dinner tonight (or last night, in my case!)? I don't cook from scratch that often, but when I do and when I find a good recipe I really like, I like to share it! This one is pretty easy and makes your house smell SOOOOO good! It's a combination of recipes I've had or found and trial and error. It only takes about 45 minutes to 1 hour, so it's fairly quick as well . . .
SHARON'S CHICKEN WILD RICE SOUP
In large stock pot, boil:
4-5 boneless chicken breasts in
3 cans (14 oz.) chicken broth
Salt & Pepper to taste
Garlic Powder, Onion Salt (or Onion Powder)
1 large onion, cut in large pieces
1/2 stalk of celery, cut in bite-sized pieces (including leafy tops)
1 cup chopped baby carrots
1 heaping tsp. minced roasted garlic (I use the jar kind)
1 heaping tsp. chicken base (I use Better Than Bouillon paste brand or you can use bouillon cubes).
It will look something like this (can't you just smell it?!!):
While chicken is boiling, cook rice in another large sauce pan, using canned chicken broth in place of water (you can cook these together -- about 20-25 minutes):

1 box Long Grain & Wild Rice (I use Uncle Ben's brand)
1 boil-in-bag of whole grain brown rice (I use Success brand) - cooked using in-pot directions instead of in bag. Use 2 bags of brown rice if you want to have a HUGE pot of soup and plenty of leftovers!

When chicken is done (about 25 minutes), remove & discard chicken skin and cut chicken into bite-sized pieces. Return chicken to pot, still simmering. When rice is done, add to chicken pot. Add 2-4 cups of water, depending on how much chicken stock your rice absorbed, until it's the consistency you like. You can still simmer this until it's time to eat (VERY low for about 30 minutes -- but not much longer than that or your rice will get too mushy), or it's pretty much ready to eat once you mix it together & reheat a bit.

This makes a huge pot, enough to freeze and save for later . . . my kind of cooking -- another meal ready in moments from the microwave! I hope you enjoy . . . let me know if you try it!

That looks yummy! I just got done browning a rump roast and adding carrots, celery, onion and garlic! It will be ready about 6:00!! I would love to have some of your soup too!!!

OH MY goodness, that was good!! I did make it today for my sick friend (put it in an embellished Mason jar with a cute tag) and of course there was enough left over for dinner! sniff, sniff, sniff, I can smell and taste it, virtually of course, LOL. This sounds like my kind of recipe especially with fall arriving (I hope)!!! We just had a heat wave and now the temperatures are at 78 and 80 degrees and that's what is predicted far into next week, ugh!!! TFS!!!

Just wanted to let you know that I made your soup! One of my kids is very picky and she LOVED it! It was so yummy! I had lots of leftovers which saved me from going out to eat or picking up junk food after our soccer and baseball games!
